  • 1/2 cup rice vinegar
  • 2 tablespoons toasted sesame oil
  • Kosher salt and freshly ground black pepper
  • 2 large cucumbers, halved lengthwise and thinly sliced
  • Toasted sesame seeds, for sprinkling, optional

  • Whisk together the rice vinegar, sesame oil and some salt and pepper in a large bowl. Add the cucumbers and toss to combine. Sprinkle with the sesame seeds if using.
