This is an excellent dish and I have made it many times. I also add toasted chopped pecans for added crunch.

Loved it! I changed it up just a little bit and didn't add the salad to it. My family really enjoyed the chicken with the brie on it. It was a nice change from the same old chicken breast!

This recipe was made for me! It has everything that I love to eat, that I had in my house, and that was easy to prepare and customize! I used Mrs. Dash Tomato Bail Garlic on the chicken and turkey bacon. I did not have shallots, but I did add raisins to the salad. Delicious meal! Everyone in the family loves it and there's never anything left on the platter at the end of the meal...
Love the combination of flavors and the healthy helping of greens! I like to add a handful of mixed baby greens in with the spinach for variety.
Thanks for a great go-to meal that all my picky eaters LOVE!

Used Blue Brie & Rex/seasoned chicken from grill. Warmed chicken, added cheese slices to top, broiled to melt. Added white wine to sauce. Allow to cool B4 drizzling on salad. Add avocados & tomatoes. Simple and great.

Amazing. I didn't put the chicken back on the grill, but put it in a shallow dish with the brie on it, and covered it with foil. It was in a 200 degree oven while I finished everything else. There was an even, shimmering coat of brie on the chicken.

Very good, and simply. Will definitely use the salad for other meals as well!

Tasted good......but I thought the timing was waaaaay off -- what kind of chicken breast only needs 3-4 minutes on each side?

I liked this, but my teenagers, who have fairly sophisticated palates really hated it. I was surprised, because the reviews were so favorable, and they usually like what I cook from food network. It does look really pretty on the platter, although the brie looks a little funny, never really melts down. I won't make it again.
