    I Made this for a dinner party and got rave reviews. I paired it with roasted sweet potato fries with a spicy basil-garlic mayo. The only change I made to the original recipe for the chicken is that I added diced apples to the vinagerette sauce and used white wine vinegar. I also dressed the spinach with some lemon juice and olive oil. Easily one of the best and most convienient chicken dishes I've ever found.

    Made this dish last night exactly as written. Used White Balsamic vinegar (for those of you who don't know which vinegar to use, and it was wonderful. Flavorful, moist chicken, and a nice sweet/sour dressing on the spinach. While my husband and I were eating I said, "what do you think about this dish using blue cheese instead of the brie?" and my husband said - Go for it - he loves blue cheese. So next time I will try it that way. But this is an excellent recipe. May make it with chicken tenders for a group luncheon coming up. Thanks for a wonderful go to recipe.

    This dish is very flavorful and simple to make. My family loved it. Instead of using foil, just remove the pan with chicken and brie from heat and place the lid on top. The cheese melted beautifully! Definitely a keeper!!

    I loved this recipe and so did the family. My son walked into the kitchen and said he wasn't going to eat it cause it had brie on the chicken and he doesn't like brie. I made him taste it and he agreed that it was great! I did use bacon grease instead of EVOO to saute the shallots (which I know isn't healthy to do, but it tasted great! I would also double the shallots, balsamic vinegar, and honey. I drizzled some over the the whole meal before serving and it was awesome! Quick to put together, light and very easy to make!

    This dish was very easy, and made for a nice light Sunday dinner for a small dinner for four. I forgot to make the bacon for the dressing but I used an additional shallot and a little more each of the hney and vinegar, and nobody missed it! I would suggest putting the grill pan with the chicken and cheese in the oven on warm while the dressing and spinach are plated. It keeps the chicken super moist and the cheese melts beautifully!

    This is an excellent dish. However, if you are a novice cook and planning on just following a recipe you will be disappointed.
    1. You need to use Balsamic vinegar or red wine vinegar NOT just vinegar.
    2. You need to use more than ""2 tablespoons of olive oil! more like 1/3 of a cup
    3. You need to use more than "2 tablespoons of vinegar "more like 1/4 of a cup
    4. You need about 1/3 cup of honey.

    we also used an Herbs de Provence to season the chicken which gave it a nice flavour.

    Sorry, Im rating and really haven't tried but, being what I consider to be a good cook, I'm certain this is going to be a very good salad. The reason I'm writing is to let everyone know, the vinegar used is "balsamic". I understand where the confusion comes in because it was not stated on the printed version of the recipe, however, it was shown and mentioned in the video. So, just to clear any misconceptions regarding what kind of vinegar to use, use 'Balsamic"! Can hardly wait to try!

    Absolutely AMAZING!! I followed directions, although I added walnuts, strawberries and hard boiled eggs to the spinach salad. I also used turkey bacon. I could not stop raving about it! Easy and delicious!!!

    This was super easy and quick! I had never used Brie before and was a little concerned my family might not like it. We are all now fans of Brie! I was not sure what kind of vinegar to use, but was all out of vinegar at home, so when at the store, a bottle of gourmet salad vinegar jumped off the shelf at me, and it was excellent. We will eat this many times in the future!
