- 3 plum tomatoes, chopped
- 1/2 red onion, chopped
- 1 jalapeno, seeded and chopped
- 3 tablespoons cilantro, chopped
- Juice of one lime
- 1 tablespoon olive oil
- Salt and pepper
In a medium bowl combine tomatoes, onion, jalapeno and cilantro. Stir in lime juice and olive oil. Season with salt and pepper.
