    Very good,easy,quick. Even my 62 year old picky, no rice,no couscous,no pasta eating husband ate it, liked it...a big wow for doing that.

    This is a simple and flavorful recipe. Everyone liked it. It had to simmer much longer than I expected for some reason, and I had to drain some of the broth at the end of the cook time to fluff up the quinoa.

    Great for a pretty basic quinoa recipe. Will surely make again and try some additions. I used tri-color quinoa and one whole sweet onion. (only bcuz I got distracted and plopped the whole thing in instead of 1/2 No harm done. I just cooked them till they were nice and caramelized. I also substituted almonds and basil for pine nuts and parsley. ( because that's what I had Was really nice.

    Excellent! I substituted toasted sliced almonds for the pine nuts, shallots for the onions since they have a milder taste, and lowered the amt of parsley to 1/4 cup. The recipe turned out wonderful. It was full of flavor. Even my 9 year old daughter took a second helping !!! Will definitely make again. It is a good base to do different variations.

    Absolutely delicious! I've been wanting to try cooking quinoa and was so happy I did. I used parsley and cilantro because I had a lot in my garden. Even my 9-year old loved it!

    I agree--nice basic recipe. Quinoa is high in protein, so made with vegetable stock it's a great vegetarian option. Today, I sauted a small bag of broccoli slaw with garlic in olive oil and tossed that in with some parmesan--very nice one-dish meal.

    I liked it, my picky 5 year old seemed to like it, my 11 month old loved it and that's about it. I think I didn't let it cook long enough, or had too much of something in there so that it wasn't fluffy. My daughter said it looked like throw up. But I love the nutty taste of it and the health benefits so I will definitely keep trying new things with this find.

    Here's another great Ellie recipe that just lends itself to improvisation. I made a double batch of the quinoa, divided it into six one-cup portions and stashed some in the freezer. Then I proceeded to experiment with different combinations of nuts, herbs & dried fruit. Here are some of my favorite combos: pine nuts-cherries-basil, almonds-apricots-parsley, pistachios-raisins-parsley, pecans-cranberries-cilantro. I happen to love Trader Joe's for their prices, and they have dried fruit without added sugar, and pre-chopped roasted nuts.
