This recipe is a keeper. It's so simple and has such a nice flavor. If you've never tried Quinoa, this is one recipe to start with. I just wish pine nuts weren't so pricey.

I JUST LITERALLY FINISHED EATING THIS DISH. IT WAS DELICIOUSSSSS! I FOLLOWED THE RECIPE..EXCEPT THAT I USED VEGETABLE STOCK INSTEAD OF CHICKEN STOCK BECAUSE I'M VEGETARIAN. BUT THIS IS TRUELY DELICIOUS AND HEALTHY FOR YOU!

I didn't have any pine nuts, so I substituted black beans. This was a tasty side dish that my boyfriend and I both enjoyed--and he seemed a bit skeptical at first. I will definitely make this again.

I've noticed that everyone here who has said this recipe is SO great has not followed the recipe as written. Did you ever make it without your additions, or did you realize by tasting it that it "needs SOMETHING". Yeah, I know what that something is...FLAVOR. Cheese, grated ginger, or any of the other additions you folks made. I just wish I read further and not just count the stars.

I didn't have the pine nuts or the parsley and I added a bit more raisins than called for and used broth...what a delicious dish! I was intimidated to try to make quinoa especially since so other recipes really seemed complicated. This turned out really well and I highly recommend it. It's no surprise that a great recipe like this came from Ellie!

This dish is delicious and a great way to start enjoying quinoa. I cooked up some shrimp and sauteed them with the onions for a little...ate the final dish for a weeknight meal. I then made this dish for a 4th of July picnic...added sauteed mushrooms and red bell peppers. The dish was a huge hit...everyone is asking for the recipe. This will be a go-to recipe for me.

This is the BEST quinoa recipe. Even my husband who has disliked every other quinoa recipe I have made LOVED this one! I topped it with crumbled feta as someone else had suggested. It was fabulous!!!
