    Easy to make quickly and tasted great. It was light but I am full. I didn't add chicken or the actual orange pieces, but added the juice from the orange I was already eating! Tasted it as is and thought it was great! About half way through I decided to add some Feta cheese and thought that was great too, but if you go this route, keep in mind that Feta could easily overpower this recipe.

    This is an easy recipe. I changed it a bit. I simmered the chicken in chicken broth and then cooked the quinoa in the stock left over from the chicken. I added frozen peas, finely chopped celery and crasins. Instead of oranges, I used mandarin oranges.
    I am planning to use this recipe to serve at a luncheon for 150 women. This salad tastes fresh and light.

    This was so easy to make and had terrific flavor. It really doesn't make very much so I doubled it. Four adults devoured it. Will definitely make again!

    I tried this recipe last night, substituting a couple of ingredients for things that I had in my pantry:
    - lime instead of lemon juice
    - orange champagne vinegar instead of orange juice/pieces
    - mixed dried fruit (peach, raisins, cranberries, etc. instead of pieces of orange
    It turned out great, and everybody really enjoyed it. The toasted pine nuts are a perfect match for the quinoa!

    This is GREAT!!!. I have made it a few times with and with out chicken. I have changed up the fruit with whatever I have in the house and raisins with crasins, but the basis of this is great. Winter, Spring, Sumer or Fall. I recommend this to everyone to try.

    I've made this a couple of times and absolutely love it. I use a snack size container of manderin oranges in place of the orange juice and sliced orange. I've also used a chopped red onion for the scallion. It's a refreshing change

    This salad is quick and so easy to make! I chilled and served cold, using canned mandarin oranges in place of fresh. A no brainer!

    My neighbor made this and gave me some to try. It has lots of flavor and is sweet. I've just printed this recipe out and I'll be making it soon.
