Ingredients

  • 2 pounds potatoes, such as russet, peeled and cubed
  • 2 tablespoons sour cream or softened cream cheese
  • 1 large egg yolk
  • 1/2 cup cream, for a lighter version substitute vegetable or chicken broth
  • Salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil, 1 turn of the pan
  • 1 3/4 pounds ground beef or ground lamb
  • 1 carrot, peeled and chopped
  • 1 onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef stock or broth
  • 2 teaspoons Worcestershire, eyeball it
  • 1/2 cup frozen peas, a couple of handfuls
  • 1 teaspoon sweet paprika
  • 2 tablespoons chopped fresh parsley leaves

Directions

Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.

While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

    This worked out really well for me and was loved by my family. The only thing I did different was use a package of pre-made... (not instant) mashed potatoes and put frozen corn and green beans, sprinkled a little cheese on top. This is a keeper. Read more

    If you really want to make this dish in 30 minutes...

    I work 10 - 12 hr days and don't always have the time to cook from scratch (I try to do my "scratch" cooking on the... weekends/holidays). Food made from scratch always tastes better, but we don't always have the time. Here are some substitutions I made to this dish, which really shortened my time in the kitchen: 1. I used Country Crock's Garlic Mashed potatoes whenever I don't have time to make my own. 2. Instead of trying to make the gravy from scratch I used the Lipton's beefy onion soup mix and added the Worcestershire and spices to that. 3. I used packaged organic frozen veggies - carrots, peas, onions, italian green beans. This cut the cooking time down by about 3 - 5 minutes (plus, I could drain the ground beef and remove the extra fat/calories by using the frozen vegetables). 4. I added 1 tsp of minced garlic to the dish. We love garlic (I married an Italian - it's all about the garlic). 5. I added 1/2 of really good Pinot Noir to the "gravy mixture" - it adds a very nice richness to the dish. 6. I make individual servings so we don't overdo it.     Great recipe. the guys in my house really enjoyed it. It was very easy to make (the hardest part being the rue). I cut... corners and used instant potatoes, but then thinned it out with some sour cream and some fat-free half and half. I also added garlic salt and paprika to the meat to add a little extra flavor and it tasted really good.Read more

    I make this every time I have leftover mashed potatoes. The kids I take care of love this, and it's fancy enough to impress... the grown-ups, too! Since I use leftover mashed potatoes, all I have to buy is beef, as the veggies are usually on-hand. I use grass-fed beef or bison. It's usually leaner and easier to deal with. Also, there's a lot of stirring, so kids can help!Read more

    My family loves this recipe but I've made a few changes even though I'm usually one to follow recipes by the book. I found... the meat/veggie mixture kind of bland so I use quite a bit of black pepper and more worchestshire than indicated. I'm going to try suggestions I've seen in the other reviews. One thing I don't understand about any of Rachael's ground meat recipes is how she doesn't drain the fat from the pan. Even when I use the leanest ground beef possible, it renders too much fat for my taste.Read more
