Wonderful salad! The first time I made this salad, I made it according to recipe. Yummy! The next time, I added diced mozzarella. Feta crumbles also works well. This salad is a keeper!

This is really good. It tastes very fresh and has a nice kick from the hot vegetables. My husband loves this salad.

Decided to serve this alongside Giada's portobello parmesean entree to add a bit of meat to a meal. I left out the olives and added a fresh Italian hot pepper. Delicious! With the marinated vegetables, the salad needed only a little dressing. Would be a meal in itself for a salad lunch.

I followed the recipe just as it was written. I had about 30 people over and this salad went fast. I did combine everything but the romaine the night before to get a jump start on it for the next day. I came home from work added the romaine and put on the olive oil and balsamic dressing. This makes a lot of salad.

This salad was very easy to prepare and full of flavor. I've had requests from my husband for this and have made it twice in one week. Thanks Rachel for coming up with such great recipes for us.

My husband, who has an aversion to veggies, ate this up. What a great idea, Rachel. Delicious.
