These muffins were a big hit at Thanksgiving. I only used 1 Tbsp of poultry seasoning as others suggested. I made the stuffin mix ahead of time to let the muffins firm up a bit. They came out of the tin holding there shape. Nice and crunchy on all sides. Will definitely make again. I'm thinking about adding some leftover chicken or turkey, freezing them and enjoying for lunch.

Way too much Poultry Seasoning, it was so overpowering it ruined the flavor of the onions & apples. Will make it again with ONE Tablespoon. Maybe RR's brand was less strong, I used McCormick. Other than that it was easy to prepare & bake.

Loved these!!! Had to leave the apple out though - my eleven year old claimed that if I put the apple in the stuffing, I would ruin her Thanksgiving since the stuffing is her favorite part of the holiday!

This would be my 7th yr making the stuffing In order to prevent from falling apart make sure it is wet but not mushy and make sure that the tin is butter up and they will come out perfect. Just make sure you buy your favorite breadstuffing or make your own with leftover bread. Ive tried different kinds of apples to change it up! Happy Thanksgiving!!

First of all, I have hated dressing since I was a little girl. I didn't like sage or mushy bread. A few years ago I found Rachel's stuffin muffin recipe. It looked crunchy and awesome. My family loves them without the apples. Which I think is strange. I still don't like sage. I substitute an organic Italian spice mix which has a small amount of sage. It works perfectly. The great thing about this recipe is that you can add or delete whatever you like.

Poultry seasoning was too much. I used an egg ( mixed in at the last minute and that worked great to hold everything together. I rolled them into balls with my hands and dropped them I to the muffin trays. Worked good. 15 minutes is not long enough to make them crispy. I am testing them prior to Thanksgiving. I am still not 100% sold on the apple. I would like this to be my only stuffing served for 26 people and wonder if this is traditional enough. They are delicious...

The stuffin muffins were an instant hit the first time I made them 5 years ago! The hardest part is getting Braeburn apples but the flavors imparted by all of the ingredients is just fantastic! It is great having individual portions of it, and I can NEVER make enough of them! There were Thanksgivings where I made 30 of them for 8 people and they were GONE by the end of the meal! Prep and cooking is easy...Rachel Ray calls herself a cook but she really is a Chef! Chef's are the ones that can combine ingredients in their heads and then apply it and it comes out great! Rock on Rachel!!!!!

Excellent recipe. I love the idea of the muffins and it being individual portions for each guest. Such a cute idea! I found that I didn't use all 8 cups of the stuffing and it came out fine. My husband HATES onions, however I didn't tell him they were in the recipe and he didn't even notice. I will deff be making this for Thanksgiving! Thanks, Rachael!
