I have made these for both Christmas and Thanksgiving, they are both easy and tasty. I didn't change anything about the recipe except for maybe the type of apples, both times it was a favorite!

I made this stuffing with Rachael's Herb Roasted Turkey Breast for our early Christmas dinner. The turkey was pretty good, but this stuffing won all of my family's compliments and just became our new holiday stuffing recipe. This recipe needs no tweaks or doctoring...it's perfect as it's written. Wonderfully tasty!

Everyone really enjoyed the diced apple in the muffins. It adds necessary personality and texture to a normally unmemorable dish.
Cooking the stuffing as muffins is an A+ idea. Regardless of what stuffing is made, this method is perfect for cooking and serving.
Note:
I had to add more than the designated amount of water to ensure moist muffins.

I never make the same stuffing recipe, each year I add different things to the stuffing. This year, my stuffing was the best, made even better my baking the stuffing in muffin tins! It was great and everyone loved them! They looked beautiful arranged on a dish, and everyone drizzled hot gravy over their stuffin muffin. No stuffing leftovers this year! Thanks for the idea Rachel!

My husband tried frying the turkey this year, so I needed to bake the stuffing. I saw her show last minute and decided to go for it. My whole family loved it and wants it again next year! The apples are a nice touch.

I just made this yesterday for Thanksgiving, it was GREAT!! Everyone loved them! It didnt come out as crunchy as I would have liked, I should have used the 2 cups of chicken broth instead of 3, but they were still awesome!

ALTHOUGH THIS RECIPE WAS FUN TO MAKE AND ALL THE KIDS THOUGHT IT WAS COOL TO HAVE STUFFING LOOK LIKE MUFFINS. I THOUGHT THE SEASONING WAS OVERPOWERING. I FOLLOWED THE RECIPE COMPLETELY AND THOUGHT WHEN I WAS MAKING THEM THAT IT WAS GOING TO HAVE TOO MUCH SPICE IN IT, AND I WAS RIGHT. I WOULD MAKE THIS RECIPE AGAIN, NEXT TIME WITH LESS SEASONING.

This recipe is excellent, I wouldn't change a thing. I would suggest you invest in one of the pampered chef food choppers for this one, the apples take a while to chop by hand.
