These were great on Thanksgiving day but they were just as great when used like a matzo ball in turkey soup the following day. Simple, delicious, and full of flavor.

They tasted wonderful except they did fall apart when trying to get them out of the muffin tin. We ended up just putting them in a bowl and mixing them all up. I added dried cranberries. I will certainly make them again next year.

This is the first year I tried something new. I loved the taste and texture. My family has asked me to do it again.

I added apple cider instead of the chicken stock to help enhance the flavors, and instead of making muffins I merely baked in foil stuffing pan as I would regular stuffing. Use your own good judgement for knowing how moist you want your stuffing to be. UMmmmUMmmmm. It was great, good with turkey which is not a strong flavored meat anyway.

Thanks rachel for another fabulous recipe. This stuffing was soooo good. The contrast of the sweet apples and the savory onions was great. This is definitely a new staple to my holiday meal.
