    I made this for the first time the yesterday ( the day before Thanksgiving to give it a trial run before the big day. I wanted my families opinion . . .well the verdict was the poultry seasoning was too strong! So, I made it again today (Thanksgiving but I cut out half the poultry seasoning and just used 1 T instead of 2 T. Everyone LOVED it so much better! I also added a little more stock and more apples!

    i have used this recipe for the past 3 years now!!!!! I absolutely love it.....Rachel Ray is the best!!!!!!
    i have alternated between the muuffins and a tin square and i add bacon to mine......it's usually the first thing on everyone's plate

    The recipe is absolutely delicious, but be aware that the instructions above differ from the video instructions. In the video Rachael puts an entire stick of butter in the pan- not 4 tablespoons. She also pours in 2 cups of chicken stock- much more than what the instructions imply. By following the video instructions you can actually make muffins that stick together. By following the recipe it is too dry to stick together as a muffin.

    I opted to make the stuffing in a pan as opposed to the muffin tin. It was pretty good, but I expected more sweet. Next time I'll add another apple and/or some dried cranberries.

    I made these last year for Thanksgiving and everyone loved them! They are so delicious and they loved the novelty of everyone getting a crispy bite.

    This is THE holiday stuffing. At first try it immediately replaced a "family heirloom" recipe we'd used my entire life. Delicious, easy, and tastes like you slaved. I don't make this into muffins but it is GONE so fast it hardly matters. I always have to run out the day after the holiday and get more ingredients to make MORE (and also make it weeknights with chicken...just once in a while...cause we HAVE to have it...

    This will be my 3rd year of switching from the usual casserole dish style stuffing, to muffins. These are delicious as is, but I never leave a recipe as is, and always make it my own.

    I saute up some zesty Italian sausage and crimini mushrooms and add it to the mix. I also can't bring myself to buy boxed stuffing "cubes" so I always use fresh cubed sourdough bread that I lightly dry out and toast in the oven beforehand.

    These are a hit at my Thanksgiving table!

    Delicious! The onion and apple is such a great combination and so flavorful. I cooked down the vegetables for a lot longer than I needed to and used less of the chicken stock, but they still turned out great!
