    Has anyone made this recipe in the muffin tins and then frozen them in advance? Does that work out?

    For the past two years, I have been invited to a friend's home for Thanksgiving and have brought this recipe with me. She assured me that her kids would not eat stuffing........they ate not only seconds, but thirds. I'm spending Thanksgiving with family this year and my friend's children are bummed.....not because I'm not coming, but because I'm not bringing Stuffin Muffins! Excellent recipe that makes yummy leftovers!

    I am not a fan of stuffing, but after seeing how Rachael Ray turned stuffing into muffins, I simply had to try the recipe! Not only did I absolutely LOVE IT, but my whole family loved it too, and no one in my family is a fan of stuffing!

    What can I say except so easy and so much faster than baking in a casserole dish, plus such a cute presentation (helpful with all the kids at Thanksgiving. To kick it up a notch I also added dried cranberries. Since we had a lot of kids at Thanksgiving instead of chopping all the vegetables I buzzed them in the food processor then cooked them, leaving only the apple chunks and cranberries visible, which turned out really nice and the kids couldn't see the hidden onions and all, just the appealing parts. The adults loved them as well. Oh, before baking them I put a small dot of butter on top of each scoop in the pan to make sure they got a beautiful crunchy top. Very important to butter the inside of the muffin tins too for this reason, even if its already a nonstick pan. Thanks Rachel! :-

    A friend made these for dinner and they were a huge hit! My family loved them, so I immediately went on line to find the recipe!
    They were also great as leftovers - just reheat with a small pat of butter on top!

    husband liked the stuffing, but it wasnt a "WOW" dish to me. I couldnt really taste the apples which was a bummer. But overall, a good stuffing dish

    I made these last night for Thanksgiving and they were a huge success! I didn't use the Pepperage Farm but subsituted the Stove Top Cranberry Stuffing Mix. Perfect portion sizes. Looks like a new holiday food tradition in our house! Thanks Rachel!

    I tried this last year and all of it was eaten...very good with the apples in it,. this year I thought that I would add some cranberries...It does use the jumbo tins but so that everyone could have enough I use the regular size muffin tins. Thanks Rachael for a new twist on stuffing!
