    I was looking for a recipe to help lower the potasuim content of the baby carrots because I love them uncooked. Tried this recipe out and am not really impressed. Need to keep looking for some way to have nice cooked carrots. Anyway, thanks for it. They are soft; but not as sweet as I expected them to be for the amount of sugar I added.

    After a few; I tried adding allot more sugar to it (after it was cook, obviously and it was etable.

    LOVE this recipe. Never liked cooked carrots except in soups and stew but decided to try this. My husband and I love it and I am sure when my 6 month old can eat solid foods he will enjoy them as well. Takes a little longer than 15 minutes but that's not a problem for me. :

    tried this recipe with light brown sugar and the carrots were not tasty at all, the kids wouldn't eat it, even I wouldn't eat it! Not a fan.

    These are a hit with my 2 yo son! He loves them! They are sweet and juicy and so tender! YUMMO!!

    I used light brown sugar, and it came out wonderful. I'd suggest using brown sugar (light or dark, or even some sort of natural sugar (like cane instead of refined white sugar.

    Went over big with my family who are not big on cooked carrots. The even went for seconds! My 16 yr old loves things a little sour... she suggested 'vinegar' (I think she needs a show called "The Sour Chef" because she likes almost everything with a splash of vinegar. I added some lemon juice at the table... wonderful!

    My kids (4 and 2 adore carrots but they demolished this off their plates, leaned over and stole whatever was on my plate, and then ate whatever was left in the serving bowl. A bit sweet for my tastes but was easy and loved. I did find that the reduction didn't work at fast as the directions and I was scared of having mushy carrots. I removed the carrots after the 8 minutes on stove, turned up the stove on HIGH for the remaining liquid and it reduced within a minute and was poured over the carrots.

    I used diagonal sliced carrots and the recipe came out great. Just the right amount of sweet and very tender.
