You can create up to five timers

Ingredients

  • 8 ounces baby spinach, 5 cups, chopped
  • 1 can chick peas, drained
  • 1/2 medium red onion, finely chopped
  • 1 tablespoon balsamic vinegar, eyeball it
  • 3 tablespoons extra-virgin olive oil, 3 turns of the bowl
  • Salt and pepper

Directions

Combine chopped spinach, chickpeas and chopped onions in a bowl. Add 1 tablespoon balsamic vinegar and 3 tablespoons (3 turns of the bowl in a slow stream) extra-virgin olive oil. Toss well to coat and combine. Season salad with salt and pepper, to your taste.

    I'm a BIG fan of R.R's salads but was a bit disappointed with this one. It seemed bland to me and not full of flavor like the other ones I've tried. Dont' think I'll be making this one again.

    Not much to this dish but don't let that deter you; it's very flavorful. I would suggest using a tad more olive oil than suggested and definitly more pepper than salt, but not quite 2 to 1. Also, not that they weren't very good, but I will mince the onions next time. Add chicken and make it a main course.
