I, too, followed the cookbook recipe--and made this with wholegrain spaghetti, not rigatoni. I agree that the increased cheese in the cookbook version makes this quite yummy! My store was out of pancetta this week (small market....sometimes they have it, sometimes they don't!, so I used regular bacon and it was still good, although I imagine the pancetta is better. This may not be the healthiest dish in the world, so I made a smaller portion (RR's servings are, as always, huge! and served it as a side dish. It was great!

This recipe was very simple to make and easy. I would add extra parmesan cheese like the recipe in her book, Cooking Around the Clock. If you don't want to buy a whole bottle of wine, I would suggest buying the 4 pack of smaller wines for cooking. Enjoy!

Great recipe and very easy to make. I added mushrooms and fresh spinach. Make sure you get the bacon/pancetta very crispy, it makes a difference.

Whilst I still love the regular creamy carbonara . I do love this tasty alternative and I can make it more often

My boyfriend made this for me on our anniversary and we've been addicted ever since! The recipe is so good that our friends all took it too and request it whenever they come over for dinner! The good parmesan really makes the difference though, use it in some olive oil with some pepper for bread with the pasta. Yum!

The panchetta is a perfect start to this easy, tasty dish. My family loved it.

This was really, really good! My boyfriend gobbled it up and told me this was one of his new top favorites. It is very easy to prepare and uses just one pan for the sauce, and one pot for the pasta, so cleanup isn't too bad. I did not use any extra oil as the bacon provides enough fat, also, I drained out the melted fat before adding the garlic/pepper. Next time I will use turkey bacon to make it even healthier.
