I really liked this recipe and so did my family. Very tasty and easy to make. I did not have rigatoni at home and always makes this with angel hair pasta instead.
Whenever I make it, there is never any leftover....except if I make an extra batch for the next day!
Very easy to make, a must try for people who have limited time to spend in the kitchen!

I made this dish with some Gewertz white wine, which I also served with the dinner. My husband called it "fancy".

I cut the recipe in half for two people, and used pre-cooked, crumbled bacon instead of pancetta. Because the bacon was already cooked and I used minced garlic from a jar, I just put all the saucepan ingredients in the same time (wine, oil, bacon, chili peper corns, and garlic.

This came out very good. I did add about 1/4 cup of sauted onion, used regular bacon, and added some extra chicken broth to make it a little saucier. My husband loved it so it's a keeper.

This was very easy and extremely tasty. My family loved it. I once had to substitute prosciutto for the pancetta and it was still great.

I read through nearly a dozen Carbonara recipes before preparing the dish for our Father's Day dinner and I chose this one. It was a good choice. I amended it slightly by using regular bacon, adding some chopped onion, extra grated cheese, and 1 whole egg to the 2 yolks, and by decreasing the wine to 1/4 cup. Prepared the dish with spaghetti and it was really good! I shall make again. :
