    I made them for my 4 year anniversary and holy crap were these bangin'. I added more horseradish than called for (about 2 tbsp in total and more sour cream because they were a little dry. I also added salt to them when they were done and it just brought everything together. I loved these and I used microwave bacon because I forgot to thaw out the real bacon but it doesn't make a difference what so ever. Will def be keeping this around. Boyfriend was definetly enjoying them. I also added half and half (just eye balled it.

    I too did some change up on the classic smashed potato, I added half 'n half, butter, and more sour cream, did not have time for making bacon, nor want house to smell so used jar version bacon and with kids in house had to leave out horseradish to serve at table for those who like it and put in Ranch drsg. and parsley in potatoes. I also used the electric mixer for smoother 'taters.

    Next time I will make large baked potatoes with oiled and coarse salt on exterior skin and then cool slightly before I scoop out most of middles of potatoes to then make this horsey version with more sour cream and butter, then back in oven to make a killer twice baked potato.

    I like the way Rachel deconstructs old classics and recombines them to utilize the same flavor combos but in an alternate dish. Rachel keeps things from getting boring to be the cook in the house.

    My husband and I loved these potatoes. They came out perfect! I served them with the French Dip Sandwiches and they went great with each other. Thanks Rachel.

    This was a great recipe for smashed potatoes. I also added butter, cream & scallions. I could'nt stop eating them. Nothing like potatoes for a main entree, works for me!

    I cheated and used a 10 min steamable bag of Orida potatoes. I also used whipping cream in place of sour cream - and I used oscar mayer bacon bits from the deli section - this cut time and mess out of my schedule - and it turned out beautifully! I had the entire meal made within 25 minutes! The thing that blew my mind is how wonderfully everything turned out - would make these again in a hear beat and with other combinations - although my husband says DON'T CHANGE A THING! Thank you Rachel!

    I just finished making it and I can't wait for my girls to come home!!! I made more enought for four and it taste great!!! The only thing i did different was adding a little milk to loosen it up. The bacon is a nice touch!!!
    Very easy fast and tasty!!

    They were dry, and tasted all horseradish and no bacon, even though i added more than called for. I added almost half a stick of butter and they were still not worth making.
