    This was SO delicious, a favorite of my husbands. Though I followed the advice of some of the other members here and used two pieces of bacon per breast, and also pre seasoned my chicken with salt pepper and garlic powder and cooked it just a few minutes each side under the broiler.. But it came out fabulous!!!

    WHAT A GREAT DISH... I MADE THE ENTIRE MEAL FOR MY HUSBAND AND HE ENJOYED EVERY BIT OF IT!!! I WILL DEFINITELY BE MAKING THIS DISH AGAIN!!!:

    I have made this repeatedly. The one thing I love about it is all of the combo's you can do. I don't always stick to Ms. Ray's recipe. I invent and reinvent it by her guidelines. This is and always will be a family favorite. 5 stars for sure!!!

    I only made the chicken breasts, and I have to say, they were kind of blah. Agree with other reviews; needed 2 pieces of bacon per chicken breast to cover. Smelled delicious cooking, but had to broil them on both sides after cooking to crisp the bacon, and the cheese flavor was faint. I only used spinach, as I had no arugula. Looked great, but was disappointed. I even added a little bit of caramelized onion and roasted pepper to the stuffing, but still was so-so. I seasoned them highly with pepper, but lightly with salt, due to the bacon, but I don't think it impacted the final result at all. Sorry, probably won't make again, and it sounded SO GOOD!

    We loved this recipie. I chose to bread my chicken though by rolling it first in an wisked egg and then italian bread crumbs. I felt that the bacon did a nice job holding the chicken together while it cooked.

    This is a nice, easy recipe that makes chicken interesting. If I did it again, I would do it without the bacon because it really doesn't need it.
    I substituted Gorgonzola for blue cheese and also added chives to the mixture of arugula and spinach.
    If you make the green beans, adding a little bit of balsamic vinegar livens them up.

    Tried this recipe tonight and even my picky 4 year old loved it! Used feta instead of the blue cheese and it was delicious! Also, the chicken breasts I had were rather large so I used two strips of bacon on them. Bacon cooked up nicely and flavored the whole breast. Cooked 25 min and came out perfectly tender and done. Bon Appetite!
