Super easy to make, but I was a little messier stuffing the chicken. I did turn the chicken over for the last few minutes and turned on the broiler to crisp up the bottoms. Tasted great, moist chicken, the kids even liked it. I will make this again.

I made this today and I thought it was really good. I did make a couple of changes. I pounded out the chicken and rolled everything up in the bacon, which kept the cooking time at 25 minutes. I also used turkey bacon, The Laughing Cow light swiss and frozen spinach because that is what I had on hand. I will making this again!

I also had to increase my cooking time about 15 minutes. It's just impossible to find nice, petite chicken breasts. Took a little time to actually stuff them, but it turned out great. Really loved the potatoes and will make them often!

I made this today and it was absolutely delicious!! Instead if the smashed potatoes, I made "Fried Smashed Potatoes with Lemons" from Giada and they were fabulous! :D

Made the whole meal today and it was great. The chicken was simple to make and tasted great. I had to increase the oven time substantially as the breasts I got were huge. Also had to use way more than 1 piece of bacone per ***** because of that. Next time I will halve them or try and find smaller pieces. The smashed potatoes and green been dish were nice complements to the chicken.

I made the chicken tonight and it was delicious! I followed the receipe and the only concern that I have is the cooking time. I had to inrease the time by 15-20 min. Maybe the chicken ***** were larger, but nevertheless it was very moist, simply yummy and easy to make.

Ok, if you're looking for a way to use what's in your frig.... this is it!!! I didn't have arugula, so I just used the fresh spinach I had.. blue cheese and chicken... OMG!! My husband was so impressed.... chicken, bacon, spinach, and blue cheese! Thank you, Rachael. I feel so good about my super easy dinner!! I didn't make the potatoes only because I didn't have them already. :

I thought this dish was pretty good, but I can never cut and stuff my chicken as easily as she can. It took some effort on my part, but the end result looked like it should. I thought it was a little bland if I didn't season the chicken with salt. I know the bacon is salty, and the recipe says to season it just with pepper, but I personally think the chicken needs a little salt too. THe beans and potatoes were awesome.
