    My husband and I loved this chicken dish. I changed it by wrapping it with prosciutto instead of bacon and made a dijon pan gravy from another one of Rach's chicken recipes. This meal beats any chicken dish I've had in restaurants. 25 minutes was all it took to cook through and remain incredibly juicy, I can't wait to make it for company.

    Just made this for my family. We loved it! I did turn the broiler on the last few minutes to crisp up the bacon. My son who is a picky meat eater LOVED this! Will make again very soon!!

    This is a great recipe but since i couldn't find blue cheese at the market I used feta cheese and left out the arugula. I used 2 pieces of bacon. LOVED IT!!!! P.S So did my picky kids!

    When I viewed this recipe on tv, I didn't have all the ingredients she used so I had to make some changes. I use frozen spinach and feta, because thats what I always have around. It turned out great. I also had to use 2 pieces of bacon to wrap my chicken breast. Our chickens in the south must be a whole lot bigger than hers are in the north. It looked pretty skimpy with just 1 piece.

    I made this for my boyfriend last night and he is already begging me to make it again. I added an extra piece of bacon around the chicken so it was completely wrapped and served it with the Brie Yukon mashed potatoes from a previous episode, but other than those minor changes followed the recipe exactly. In this tight economy it is very nice to have a recipe that doesn't need millions of ingredients, but still tastes amazing. Super easy and mega delicious!!

    My husband LOVED this! I did make a few slight changes though.. I didn't use the arugula, just added more spinach. I also added a bit of pesto to the mix! On top a put a Hollandaise sauce - YUMMY!

    This turned out much better than expected. I have never in my life eaten blue cheese so that was a first for me... I used it only because my husband is a huge fan of blue cheese. Followed the recipe pretty much but here are a few things I did differently.

    1. Pounded breasts between saran wrap to flatten a bit prior to stuffing
    2. Seasoned with garlic sea salt and pepper on both sides.
    3. Omitted the arugula
    4. Wrapped in bacon and seared in a hot pan for about 7 minutes on each side
    5. Let each piece rest prior to cutting (I did not do this with the first I cut and it was messy... a few minutes resting time really took care of all that.

    I served this with angel hair pasta and alfredo sauce...

    Used garlic and herb feta cheese instead--it was very overpowering to the chicken and bacon. Overall, it wasn't bad, maybe a little salty so I would use low sodium bacon next time.
