I alsolutely LOVE this recipe! I do not like blue cheese so I stuff the chicken with goat cheese and spinach leaves...it is incredible! I also slit the chicken long ways and then seal with toothpicks because you can get a lot more stuffing in that way. This is one of many Rachel Ray recipes that I have tried and she never disappoints me! This one is a winner.

This was a very easy and healthy recipe to make. I made it exactly as the recipe says. Next time I will cut the bleu cheese and add some spice or other type of cheese to the chicken. It was a good base recipe to change up to individual taste. I will make it again and appreciate Rachel Rays consideration for making a healthy, no-fuss recipe!!

I substituted turkey bacon to be diet friendly. My husband and I liked the idea of this recipe, however, we both decided that we don't like arugula. Does it normally have a bitter taste? Anyway, will make again with just spinach.

Cooked it tonight with tomatoe basil feta instead of the blue cheese. Also omitted the arugula, but added extra pepper to the spinach. Everyone loved it and it was super easy!

I enjoyed the simplicity of this recipe. Instead of wrapping the chicken in the bacon, I precooked it, crumbled it and added it to the stuffing. I'm thinking about adding fresh basil or cilantro to the stuffing next time.

I DECIDED TO USE A DIFFERENT STUFFING.:
DILL, PARSLEY,CORRIANDER, GORGINZOLA CHEESE, AND A RARE CURED MEAT CALLED BASTERMA (GOOGLE IT! I CONTINUED TO WRAP THE CHICKEN IN BACON. IT TOOK ME 55 MIN. TO COOK THE CHICKEN TO REACH A TEMP OF 160 DEGREES (PROPER CHICKEN TEMP @ OVEN TEMP OF 425 DEG. WHAT A GREAT MEAL!! I LOVED IT.

Good meal to make with other people. I made it with siblings and it was easy, no stress and a lot of fun to do. The chicken was moist the potatoes had great flavor and the green beans were delicious.
