I followed the recipe to the T save for the pineapple. My family loved it! I don't know why people are complaining that the bacon won't stay, do what Rachael says in the vid: seam side of bacon down!

Given all of the bacon comments I tried it with proscuitto instead. Was good...but definitely needs some sort of tropical dipping sauce. I used a blend of orange/pineapple preserves I picked up in hawaii blended with a little chili sauce...worked OK. It was just OK.

I haven't had a chance to sample because it takes longer than the recipe indicated. So I would suggest start this sooner than the time allocated. It does smell good, but when does bacon cooking not smell good.

I have made these a few times and as soon as you put them on the serving plate they are gone! However, you must precook the bacon until it is almost done, yet pliable, then wrap the shrimp and pineapple because the shrimp cooks faster than the bacon and most of my guests like the bacon crisp. Easy and you can wrap the shrimp/pineapple ahead and cook right before you are ready to serve.

simple, fast, easy. I made this many times and the only thing different I did was use maple flavored bacon.

Bacon tastes great when its nice and crispy. Even after precooking it was too soft. Flavors didn't go great together. Def wouldn't make it again. I only made about six and we all agreed it was not great. Wish I would have paid better attention to the reviews.

I have had great success with Rachael's dishes, but this one just didn't do it for me. Bacon should be cooked slow and shrimp cooks pretty fast so the method doesn't work. And when said and done, the flavors are not interesting.
