the 4 stars is for the technique, not the flavor. Pineapple and bacon go great with shrimp. The thing is that shimp cook faster than bacon does. It works a lot better to get crispy bacon if you partially cook the bacon FIRST, then wrap em and finish them off. I still like mine better though...which is like this but also has a soy glaze brushed on it as well.

I cooked the bacon 3/4 of the way (i like my bacon crispy then wrapped them all up, put them in a pan (remaining shrimp that were not wrapped I threw in the same pan with the pineapple juice and put the pan on the grill for about 5-6 min. These were a hit with everyone. Absolutely TO DIE FOR!!!

So Delicious!!! I used pre-cooked bacon and they turned just as great. It also made it easier to wrap the shrimp and pineapple and pin it all together.

I was surprised. I'd always heard of bacon wrapped around scallops (minus the pineapple. And I was hesitant about using shrimp. I was also concerned about whether or not the bacon would be fully cooked with only 3 minutes on each side in a skillet. So I cooked it for 4 mins on each side. And it worked! The texture and the little bit of sweetness from the pineapple was delicious. Cost - Shrimp - $10.00, Bacon - $5.00, Pineapple - $4.00 TOTAL - $19.00 Served 6-8 people cocktail snacks on New Years Eve. Okay Rachel. You haven't won me over. But these were really delicious.

I guess because I'm old, this seemed a little bland. Browned both sides and then put a dolph of BBQ sauce on each in the elec. Frying pan. Covered and used as a chaffing dish. BBQ sauce hit the spot.

I made this for New Years Eve. Since the bacon takes so long to cook next time I plan to pre cook it. Despite the slightly under cooked bacon this was a tasty recipe and I will prepare it again...with precooked bacon next time!
