I do alot of entertaining. These are quick, easy and delicious. I made mine ahead and just had them ready in the fridge until my guests arrived them started cooking and plating them. They cook so quickly (with thin sliced bacon they making having company a breeze. The next time I try them I am going to substitute a date for the pineapple to see how that tastes but the pineapple is delicious. Be sure to wrap the bacon around the middle, not end to end and they stay together nicely! Thanks for a great recipe.

Could not get the bacon crisp without burning the shrimp. Not a good recipe,they did not taste great.

WOW! These were a huge hit. The only change I made was using thick-cut bacon. Then I coated both sides of the bacon in a mixture of brown sugar and cayenne pepper before wrapping it around the shrimp and pineapple. This gave it a little heat, and added to the sweetness of the pineapple. I also baked these instead of frying. Thanks Rachel, for all your great recipes.

Very good! I have also tried mango, in place of the pineapple, and grilled, rather than fried. Also very good. Try sprinkling with a spicy concoction called "Joe's Stuff"...order online.

I agree with other reviewers on a couple of points - the bacon overpowered the shrimp AND even though I used med. high heat as the recipe said, the bacon burned. I did use center cut, but seemed too salty. I did enjoy all the flavors, and it was easy enough to throw together. Next time I would try a different bacon and maybe not wrap the whole thing in bacon, but prepare a skewer.

I LOVED THIS! I used the bacon that I happened to have in the fridge(store brand and very thin, not the best idea, I would suggest thicker bacon. Also, I wouldn't recommend reheating this, so make what you plan on being eaten right then. I thought it was pretty easy, a little tedious, but that could be because it was not only my first time making this and I'm pretty new at this whole cooking thing but also because I used super thin bacon.
I would defiantly recommend this as well as make it again!!
