I don't even like spinach salad and this was by far one of the best salads I've ever had. I have to twist my 10-yr olds arm to eat vegetables and she ate it all up. That's how good it is. Takes longer than 30 minutes to make though. Well worth trying it out.

I took this salad as a basis and created my own. I swapped the balsamic chicken cutlet for nuggets since I was running late frm work and was starving- i ate 2/10 nuggets and the rest I saved for the salad. Since nuggets have a lot of calories I didn't use bacon. I like my salads to have a kick so I mixed in with the spinach some rosemary, cilantro, a quarter of a jalapeno, a little bit of red onion and the mushroom. Since the salad items had a lot of flavor I wanted to keep the dressing simple so I did a balsamic vinegarette with a little bt of apple vinegar. The mix came out amazing!!!! Thanks to this amazing recipe I was able to adapt it to make it my own. i gave it four stars because it took longer than 30 minutes but it was worth it. Each bite was a delightful surprise of flavors!

I loved the flavour combos in this salad. Just an FYI - this salad makes WAY more than 4 servings!

This was a really great! My husband absolutely loved the dressing and the chicken. I think next time I will add a balsamic reduction sauce on top of the chicken to add some sweetness...

I made this for my family and I wasn't sure if they would like it. My dad is a very picky eater, but he LOVED it! I omitted the radishes, but it was a hit in this household!! Delicious!

Even with my omissions (no fresh rosemary or radishes and additions (hard boiled egg and avocado, this was easily the best spinach salad and chicken ever. My boyfriend (who eats almost everything, but rarely spontaneously praises my efforts couldn't stop commenting how delicious this was. Thanks again, Rachel!

I actually used this recipe to make pork cutlets instead of chicken (because that's what I had on hand and my kids couldn't stop praising my cooking skills! They're 10 and 5, and quite the food critics. They said this is the only way they want their pork from now on! Making it again tonight because it's so easy and definitely a new favorite around here!
