I made this with zucchini, yellow squash and mushrooms. It came out very tasty, but I next time I will not use this combo of veggies. The squashes have a high water content so after trying for the seven minutes to cook off the water, I actually had MORE liquid in the pan than the water and vinegar I added in the beginning. I had to drain this mixture and them finish the recipe as directed. It's my own fault for forgetting about the veggie water content. :( This does taste wonderful though. Just next time I won't use two squashes.

This was a very simple dish and it was easy to make. Possibly practice making a balsamic reduction first so you know what to look for with these veggies. Thanks!
