I used regular sized sea scallops and didn't cut them in half -- wrapped the whole scallop in the bacon. When the bacon was cooked the scallop hadn't dried out. Loved the balsamic and brown sugar marinate. Will definitely make it again.

Prep was a snap on this one, so I was hoping this would turn out to be an easy way to enjoy scallops on weekday nights. Soaking the scallops in the balsamic mixture (which was quite tasty didn't seem to improve their flavor. The scallops turned out chewy and dry. My family ate it, but DH and I agreed it's not a keeper.

Too many expensive ingredients and not enough good flavour. The scallops lost their great texture and sweet taste, all I tasted was the bacon... The chestnuts gave a nice crunch though. Won't make this again.
