    This is an absolute staple in our house. We make it all the time. We serve it with the honey nut chicken, or with tacos, enchiladas and with anything on the grill. It's an awesome side dish any time of year. We always bring it to summer parties, it's very good cold.

    This is amazing! An excellent side dish. I love the barbeque sauce with the vegatables. Served with the peanut chicken and it was yummy!

    my bf and i eat mostly vegetarian dishes, and i was searching for something simple and barbeque related for summer dinners. this could not be a more perfect recipe. it is fast, a great vegetarian barbeque option (which apparently is a rare find! and involves ingredients which i always have in the house. we make it with cajun seasoned potato wedges on the side for a quick dinner on busy nights. thanks!!

    We have cookouts often and this is a great addition . I have already served it several times and always got great reviews. I plan to continue serving it often.

    Made this a while back and fell in love. Everyone at the table loved it and it has been a go to side for a long time now. If you have not tried it, you should because you are surely missing out.

    I made this before, and it was so good I made it again for a potluck lunch at my post-rehab rehab place I go to. I used some frozen Fire-Roasted corn I got at Trader Joe's. After the lunch, one of the directors handed me the empty bowl. This is one of my favorite recipies that I have ever made!

    OMG! This stuff is sooooooooo good! It's really easy, would transport nicely, keeps well, fast, and is really tasty and healthy. I could eat it daily!

    I made this recipe for my family last week and they all loved it. I am making it again tonight. The colors are beautiful and the dish is just so delicious. The prep time for me took longer than 5 minutes though. I find all of the recipes that I have tried from Rachael take longer than stated. But I still love this recipe and will make it again and again.
