    Made this for dinner tonight & flavors were terrific, interesting play of textures, very easy to make. Gave it a 4 rating only because the general consensus of all was that there was too much chipotle called for and the heat detracted from the overall tastiness. Will definitely be a repeat, just with half the chipotle.

    Chicken has a great spicy flavor to it! Made salsa salad but did not use pineapple or red onion since I do not care for those flavors...may add pineapple next time to tone down the spicy/smoky favor with chicken and polenta. Polenta has unusual combination of ingredients but definitely worth making to go along side with chicken and salsa on top

    We have only tried the chicken and the salsa salad, but we love both! For the chicken, I used chipotle chili powder for some extra flavor, but I used less because it is so much hotter than regular chili powder. The salsa salad is truly amazing, with the great punch of the grilled pineapple. Plus, it gets better the longer it sits!

    chicken was kind of bland. if the size of the chicken breast is big you'll have to finish cooking it in the oven otherwise the inside will not be cooked but the outside will start to burn (brown sugar ib the rub. Did not make polenta

    This recipe was great. My husband could not stop saying how great it was. The salsa salad was also wonderful. It was just the light type of meal to have on a hot summer day. I am defiantly going to make again.

    Can't go wrong with this dish!! I didnt have the pumkin however i followed everything else for the polenta recipe to a t and it was still amazing!

    I only prepared the grilled chicken portion of this recipe as I was looking for a lighter version to prepare with a salad. I added red pepper flakes to the rub to up the heat factor. I then balanced this with crisp, romaine leaves, pineapples, and dried cranberries tossed in a light raspberry vinaigrette dressing. The chicken smelled so delicious while it was grilling! I will definitely repeat this recipe again!

    I love this spice blend with the brown sugar but I bake it in the oven at 425 instead of grilling it.

    I didn't bother with the polenta since my supermarket didnt have canned pumpkin.

    I only made the polenta and ew. I love all of the ingredients in it yet the result was slightly spicy baby food. I tried but I couldn't eat more than a few bites.

    Honestly, I didn't care for the polenta. I usually love sweet and spicy together. My husband didn't care for the chicken, but I really liked it. Loved the pineapple salsa!
