    I only used one pound of ground beef, added about a Tablespoon of ground coriander, and used one can of black beans and one can of pinto beans. I did simmer for an hour or so, just because I was trying to time the baby's meal to align with ours so I could eat in piece. I also added about a teaspoon of onion powder to the cornbread toppers. Everything was sooo good I can't wait to defrost the leftovers!

    I got this recipe off the Internet a few years ago and have been using it ever since. It's super easy to prepare and make, even though it's quick it tastes better than those "simmered all day" chilis. I usually do simmer the chili a little longer than the recipe states, but just for that psychological factor. The black beans are a nice change from kidney beans, which I now don't even like in my chilis. Rachael Ray's All the Way!!

    Best chili I've had in quite some time and very easy to prepare! I seasoned the meat with not only the salt and pepper, but with steak seasoning while browning. I also threw in cinnamon sticks which gave it a great flavor!

    The corn cakes were very good also! I threw in some bottled pimientos for color and these came out great, too!
