I love trying new recipes! This is a keeper. A 10 point O as we say in our family. Quick and easy and I like the idea of throwing everything in one pot. I used my food processor for chopping. I didn't change a thing. I have acid reflux and cannot handle spicy foods and this had just enough spice for my tummy! Yum O!!!! Thanks Rachael!

I don't use any other chili recipe. This is it! It's so easy, it's quick, and the flavors are wonderful! I did substitute the tomato paste with pasta sauce I had on hand. It worked great! I have done this recipe 4 times in the past 2 months or so, and my family still asks for it.

This is fantastic for a 30 minute chili!! The corn cakes offer something a little different from the usual cornbread or muffins, and they really add something to the presentation factor. The recipe is fantastic as is I did however add some tomato paste to thickrn it just a bit.

This is my go to chili recipe. It's easy, tastes fresh, and looks pretty. I love serving the corn cake on the top -- makes it like a chili pot pie. I use 93% lean beef and use about 1.5 lbs, but with all the veggies in this recipe, the meat goes farther. Great recipe for a weekday dinner with plenty of leftovers for lunch the next day.

Last night was the first night below freezing in Atlanta, and I was looking for a fast, healthy, and delicious chili recipe. This recipe was perfect! The lean meat and the fresh veggie were a wonderful combination. I had a can of fire roasted tomatoes on hand and they added a little extra smoky savoriness. My husband loved this chili recipe and so did I. We will definitely make it again!

My MIL sent us 2 lbs of ground buffalo from a ranch in Montana, and this is what I decided to make with it for dinner. WOW! I made the following changes to the recipe besides substituting the meat: used only half a jalapeno (the kids don't like it too spicy, used a can of fire-roasted diced tomatoes instead of the regular diced, used 1 can black beans and 1 can red kidney beans because we like variety, added one fresh tomato chopped at the very end because we had it hanging around, and added shredded cheese at the table because pretty much everything is better with cheese. It was ready in no time and YUMMO! Also, those griddle cakes are to die for!

I made this when lots of people were coming over. It didn't take any time at all to prepare and was great even after being kept over a low flame for a while. I didn't have all the chili powder that the recipe called for so I filled in the gap with smoked paprika and it tasted fantastic. This will be a fall/winter favorite from now on.

I have been making this chili for the past four years! I have won chili cook-offs with this recipe, and once last year in a winter storm my husband and I got snowed in and thank goodness we had everyhting on hand to make this chilli. I take it to tailgate parties and whip it up after work. Becasue it only takes 30 minutes, and I usually have all the ingredients on hand, it has becaome the dish for all occasions. Thanks again, Rachel!
