I thought I'd try something different and this is a pretty good basic chili recipe. Perhaps it's not fair that I'm comparing this recipe to Mom's, but for those that don't have a good chili receipe passed down from Mom, Grandma, or Aunt Susie try this one.

Had some leftover hamb seasoned for tacos and decided it would be a great base for chili. Turned to Rach for a quick fix idea as I had a busy day--wow! The results were so good that it was 'dug -in'before I arrived back home! (I prepped and then went out for appt--when I finished short mtg I called home to have it warmed to serve---but too late--it was warmed and half eatten!!!! I whipped up corn cakes in literal seconds when I arrived and officially served--OH MY--SO good-- what a welcoming warm dinner treat after a long day!

...and it was delicious! It really hit the spot, although I didn't make the corn cakes on top, just served it with fritos, but it even satisfied my carnivorous father with loads of meat!

I make this chili often, but I omit the corn cakes (didn't care for them. I use kidney beans instead of black beans. I tweak this recipe according to my mood at the time. This is a great base recipe and it freezes well (so double or triple it!

I've used this recipe many, many times and always get rave reviews from my guests and boyfriend. They all love it. Another variation on this, is I add some frozen corn when it's close to done cooking. Makes it so good! Enjoy!

This chili was really yummy! Very easy to make. I recommend to let it simmer for at least 30 minutes, it will taste a lot better.

I thought the chili was great...especially with the cakes. I added a bit of sugar to the cakes to make them sweeter. It was a great savory and sweet combination.

I'm not the best cook in the world, but everyone was impressed when I made this dish. It's fabulous and easy to do.

The chili is delicious, but not spicy enough for my area of the country. Have to add Rotel tomatoes. The Corn Cakes are such a great idea and are very good.
