I served this salad for my husband and two friends and everyone loved it. It was ALOT of salad though so you should cut back accordingly. Also, the recipe involves alot of chopping so it IS easy but a little tedious.

This was a wonderful way to begin the traditional Christmas feast celebrated in many Italian homes. Easy to prepare, very tasty, the colors were exceptional, can be made ahead just do not add any greens let the meats soak up the dressing. Wonderful!

I love this recipe because it something that can be made in the middle of the week and enjoyed through the weekend. Also as the ingredients sit in the refrigerator the flavors mend together and it gets taster and taster everyday
