Ingredients
  • 1 can, 14 ounces, black beans, rinsed and drained
  • 2 cups frozen corn kernels
  • 1 small red bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 1 1/2 teaspoons ground cumin, half a palm full
  • 2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
  • 1 lime, juiced
  • 2 tablespoons vegetable or olive oil, eyeball it
  • Salt and pepper
Directions

Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Yummy, I made a few adjustments and it is spectacular. We don't like raw onion so I did a quick saute on them, I didn't have any bell peppers so I used a can of green chiles. I will be taking this to parties and picnics. Super yummy, hope it lasts till dinner, everyone keeps walking by and taking a bite. item not reviewed by moderator and published
This takes minutes to make. I used left over fresh corn on the cob. A perfect remedy for fresh corn the second day. item not reviewed by moderator and published
I loved it! I added chipotle Tabasco sauce, black olives and a ripe avocado. Wifey and I ate it all, down to the last onion bit! item not reviewed by moderator and published
This is one of my favorite recipes. It literally takes two seconds, so it's great when I'm in a huge rush, and it's super healthy!! Thank you thank you thank you!! I normally use a smaller red onion and a larger pepper, which makes it a little sweeter. Great with a few corn chips and lettuce! item not reviewed by moderator and published
Super easy and very tasty. I used chipotle Tabasco and the salad was great! It was smoky and fresh and delicious. It was a perfect choice for our Fourth of July barbecue. item not reviewed by moderator and published
I oven roasted corn with butter and plenty of salt and pepper so I did not need to add salt and pepper at then end. Everything I used was fresh and it was easy to adjust the seasoning. I made it ahead for a dinner and it was very tasty. item not reviewed by moderator and published
I usually love Rachael's recipes but I was not a fan of this salad. Made it for dinner last night for our family. Nobody cared for it. After having her Black Bean Salsa as a side, this was very bland. item not reviewed by moderator and published

As-is is great, but I had an avocado that needed eating and it was a delicious addition. Served it with some artisan tortilla chips and needed nothing else for dinner! item not reviewed by moderator and published
