Ingredients
  • 1 can, 14 ounces, black beans, rinsed and drained
  • 2 cups frozen corn kernels
  • 1 small red bell pepper, seeded and chopped
  • 1/2 red onion, chopped
  • 1 1/2 teaspoons ground cumin, half a palm full
  • 2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
  • 1 lime, juiced
  • 2 tablespoons vegetable or olive oil, eyeball it
  • Salt and pepper
Directions

Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

This is one of those recipes that you can tweak to suit what you have on hand, which is how I came to make Rachel's version. I used one 14 oz. canned corn vs. frozen. Didn't have the bell pepper, but used a can of green chilis instead (what my other recipe calls for. Only used 1 tsp cumin, and 1 tbsp. olive oil (didn't feel like you needed more. And I added some tomato because my other recipe calls for that. I only used 1/2 a small yellow onion (again because that is what I had. With all that said...LOVE it. I love black bean corn salsa, and love to add it to burgers, salads, and tacos for a "Southwest" feel. I normally don't use Rachael Ray's recipes but I needed something to compliment a beef fajita besides rice. This was PERFECT, EASY, & VERY GOOD. I used Frank's Hot Sauce...which is the BEST without over-powering heat. I feel this will be an awesome side for summer dishes. Great, easy and quick recipe! This was very scrumptious and a great side to my fajita dinner. The only thing I did different was instead of using frozen corn, I used canned kernel corn and kept it in the fridge until I was ready to serve. I had a similar dish somewhere , so I gave Rachels' version a try ! Big Winner ! I've already thought up variations for this to use with other applications ! Adaptability is key ! Finished yet another version of this dish ! Popped a jar of roasted red peppers in the Quezz-o-matic with a few garlic bulbs and peeled limes . I cut off the stringy centers . Hit that on high til fairly liquid . Pour it over the basic recipe minus cumin . Kids love to make wraps , so I tried it with some melted monterey jack with halopenos , green chile salsa / picanta or whatever ! Fantastic on lightly buttered and fried large corn or toasted flour wraps ! I did the small corn ones and rolled them up in some shallow stoneware with added cheeses on top per everyones pref. . Into the oven to melt and heat thru and then finished with garnishes like spring onion , salsa and sour cream ! BINGO !! I just made this for the first time for a potluck and this is a recipe I will be using for years to come! I followed the advice of other reviewers and added cilantro and more lime juice. I substituted halved grape tomatoes for the diced red pepper (just a personal taste preference. I also wanted to stick with as natural ingredients as possible, so instead of using hot sauce I added extra cumin and a generous amount of ground black pepper. This is so easy and as Rachel would say... "YUMMO!" I added a little cilantro as I had some in the freezer. I mixed it up and tasted it - great. Then I made the mistake of sticking it in the fridge with the spoon in it... kept going back to it. Had to take the spoon out so there will be some left for supper! I was looking for a quick side to go with a potluck BBQ dinner & decided on this one. I doubled the recipe, used a jar of roasted red peppers for the fresh bell pepper, Cholula hot sauce for Mexican flavor and about a teaspoon of honey to mellow out the strong lime flavor of the dressing. Nice and refreshing salad. I actually cooked the beans myself the day before and refrigerated them in the Mexican style with epazote.I used fresh corn instead that was on sale. Great Salad! This morning I needed a pasta salad quick so I just threw this one into some cooked try-color rotini (that's all I had and added a couple big roma tomatoes and some grated mexican blend cheese. I cut back the hot sauce to 1 Tbs, added a little extra oil, and I didn't have any red onion so just used a small sweet white one chopped very fine. It tasted great! Delicious! I didn't put in the onion and I didn't use the oil as I'm now on a low fat diet. I love this recipe! I'm on a diet and I get tired of lettuce. This salad is so good I eat it with meals and also if I just need a snack. I make it with Kuner's southwestern gold 'n white extra crispy corn. I like it better than with frozen corn because it has that extra crunch. I made this salad with fresh oven roasted corn on the cob since we had some on hand. This salad was so flavorful and delicious! I would definitely make this again. I also threw in chopped tomato since some other recipes did that. I had it as a side dish with some yummy grilled Jamaican Jerk chicken with mango-cilantro salsa (Bobby Flay's recipe) and it was a great meal. Thank you very much for such a delicious, quick, tasty and healthy dish that could either be a main dish, salad or dip. My dad's diabetic and some guests are vegetarians. My friend told me how good this salad was so I had to try it. I changed it a bit substituting what I had on hand. I used a jalapeno instead of sweet pepper, and vidalia onion instead of red onion and cut the Tabasco in half because of the jalapeno. I also added cilantro because I love it. We really enjoyed it! This salad/salsa is amazing ! I looked at the recipe then at reviews and decided to make for a tailgate party at the races tomorrow .
