    Who knew such simaple ingredients would be so good. I also omitted the red pepper and substituted canned, diced tomatoes. This is a quick recipe that can be put together at the last minute. This is also GREAT as a taco condiment!

    this salad is delicious, EXTREMELY easy, and really quite beautiful with all the rich colors - always a success with company or for potlucks and picnics. like others, i added garlic powder, lime, chopped cilantro, a kick of sugar and sprinkled the top with cotija cheese before serving. if you don't have access to cotija, finely hand-crumbled feta isn't half-bad. i don't like red bell peppers, so i used green, and the taste is great.

    omitting the hot sauce and going easy on the cumin, it's also delicious tossed with romaine lettuce, shredded monterey jack cheese, cut up barbecue chicken breast, and a little bacon for a southwest barbecue chicken salad!

    made this for an easy and last minute easter hors d'eouvres and it was FANTASTIC! everyone loved it - though i did make a few alterations... fresh corn instead of frozen corn (uncooked, right off the cob half a green pepper, minced yellow onion, curry powder instead of cumin, and lemon instead of lime! : like i said - last minute! but it was delicious!!

    I normally don't use Rachael Ray's recipes but I needed something to compliment a beef fajita besides rice. This was PERFECT, EASY, & VERY GOOD. I used Frank's Hot Sauce...which is the BEST without over-powering heat. I feel this will be an awesome side for summer dishes. I will definitely keep this on hand.

    This recipe is awesome! I work at a high school and our harvest of the month was "BEANS". Students chose this recipe and everyone loved it! We prepped, put together recipe, ate and had time to clean up before the bell rang : Healthy, fiber infused, teenager approved..... what more can you ask for?

    Great, easy and quick recipe! This was very scrumptious and a great side to my fajita dinner. The only thing I did different was instead of using frozen corn, I used canned kernel corn and kept it in the fridge until I was ready to serve. I used canned becuase I thought that the extra water, as the corn thawed, would make the salad a bit soupy.

    I had a similar dish somewhere , so I gave Rachels' version a try !
    Big Winner !
    I've already thought up variations for this to use with other applications !
    Adaptability is key !
    Finished yet another version of this dish !
    Popped a jar of roasted red peppers in the Quezz-o-matic with a few garlic bulbs and peeled limes . I cut off the stringy centers . Hit that on high til fairly liquid . Pour it over the basic recipe minus cumin . Kids love to make wraps , so I tried it with some melted monterey jack with halopenos , green chile salsa / picanta or whatever ! Fantastic on lightly buttered and fried large corn or toasted flour wraps ! I did the small corn ones and rolled them up in some shallow stoneware with added cheeses on top per everyones pref. . Into the oven to melt and heat thru and then finished with garnishes like spring onion , salsa and sour cream ! BINGO !! I'm trying this version with Mola' next time .

    Made this tonight. It was a hit and it was SO simple. Added some flash steamed peas, a tomato, and only did half a lime. Used sriracha. Tasted wonderful. Going to have a little more now for a midnight snack!

    I just made this for the first time for a potluck and this is a recipe I will be using for years to come! I followed the advice of other reviewers and added cilantro and more lime juice. I substituted halved grape tomatoes for the diced red pepper (just a personal taste preference.

    I also wanted to stick with as natural ingredients as possible, so instead of using hot sauce I added extra cumin and a generous amount of ground black pepper. This is a great side for burgers!
