This is so easy and as Rachel would say... "YUMMO!" I added a little cilantro as I had some in the freezer. I mixed it up and tasted it - great. Then I made the mistake of sticking it in the fridge with the spoon in it... kept going back to it. Had to take the spoon out so there will be some left for supper! Nice light dish to go with beef burritos instead of hot, refried beans which seem heavy on on hot day.

I was looking for a quick side to go with a potluck BBQ dinner & decided on this one. I doubled the recipe, used a jar of roasted red peppers for the fresh bell pepper, Cholula hot sauce for Mexican flavor and about a teaspoon of honey to mellow out the strong lime flavor of the dressing. I hope it will be a hit at the picnic!

A light, refreshing delight! I keep looking for different ways to use it, think I'll try it as a baked potato topper next. Wish I could give it more than 5 stars.

Such a great recipe, very fast, delicious but, more important, versatile. Use as a salsa with chips, salad or as a topping for fish, chicken or meats! Fast to "make" and tasty!

Loved that it was so easy to make for our 4th of July party. Guests loved the freshness and summer taste. Left out the hot sauce and cumin but added additional lime and cilantro which was a great touch.

I love this receipe, I tried it without the oil, used cayenne pepper instead of tobasco and used cilantro. It was a great hit, especially to eat in this 105 degree temperature in chicago...

Nice and refreshing salad. I actually cooked the beans myself the day before and refrigerated them in the Mexican style with epazote.I used fresh corn instead that was on sale. Didn't have Tabasco sauce but used a Sweet Cajun Blackening Sauce. It had a nice balance of flavors, and was very easy to make.

GREAT dish! I also added Cilantro and Avocado, and this was a huge hit at my 19yo daughters birthday party. 12 kids plowed through this bowl and gave it great reviews. Many used it as a salsa with chips and others ate it as a salad.
