What a great recipe it's refreshing and healthy and a great for summer.
It's called North Carolina caviar where I live and sold at the deli counter.

We really liked this dish. It was a nice and easy way to eat some veggies. As one of the previous posters mentioned, I also added some celery to the dish and it was delicious. My only suggestion would be to somehow add some more flavor to the "sauce". It needed a little something, but i don't know what.

I made this recipe for the first time a few nights ago and everyone wants the recipe. It's a fast, simple, and inexpensive recipe. It's also a great "what can I bring" dish. You throw everything together before you leave the house and it is ready when you arrive at your destination.

I was amazed by the great flavor this has! My husband loved it as well. I would use it almost as a salsa. I think it'd be great with tomatos too, but it was great as-is!

Great recipe! It is especially good if you roast the red pepper.

This is a great recipe. We have made it at least 5 times, both for family dinners and for company and everyone loves it. And, it is super easy!!

I've made this a few times for parties and have always received rave reviews. I stir in chopped cilantro right before serving for added freshness, so good!

I liked it as a cold salad, however, I feel it would be better warm.

We had a mexican themed party and I made a double batch of this. People scooped it with tortilla chips, ate it as a side dish, and used it as a salsa on their fajitas! There wasn't much left and I got many requests for the recipe - it was almost embarassingly easy! ;-
