Great Salad! This morning I needed a pasta salad quick so I just threw this one into some cooked try-color rotini (that's all I had and added a couple big roma tomatoes and some grated mexican blend cheese. I cut back the hot sauce to 1 Tbs, added a little extra oil, and I didn't have any red onion so just used a small sweet white one chopped very fine. It tasted great! Would like to see what Rachel could do to make it even better.

I used this last night to put on my chicken tacos. It was full of flavor. I used shoepeg corn instead of frozen, added a pinch of sugar and garlic. It was the perfect accompaniment for my tacos. Thanks Rachael. Hey and what's with this recipe anyway? NO GARLIC! Please your the garlic queen. A recipe of yours without garlic, that's unheard of. It must have been a type o.

Delicious! I added fresh cilantro, diced cherries and sliced cherry tomatoes for sweetness, and just before serving, a sprinkling of feta cheese. The salad was devoured.

This was a very good salad. One of the best things is that it is so easy to make, and even the younger kids liked it. I will definitely make this again.

So easy and so delish! Don't underestimate this recipe because there are only a few ingredients in it. The flavor is great. I added a little cilantro, because I'm crazy about it, but would be great without it!

Super easy, last-minute side to bring over to a friend's house for a dinner party. I had everything I needed already to make it, except for the red bell pepper. So to add extra color and flavor I added cilantro instead. And our friends don't like things very spicy so I put about half the hot sauce in. Tastes great! I can't wait to eat some more. :

I love this recipe and make it quite frequently to bring to parties and potlucks. I omit the hot sauce and oil and will add cayenne pepper, lime zest, and a bit more lime juice. It's delicious as a salad or a salsa. Yum!!
