Love this recipe! I've been eating this salsa over cooked, cooled quinoa for lunches this week (with a dollop of plain low fat yogurt---Yum-O!. I've tried this recipe with the addition of a little diced red bell pepper and I liked that too, but it's not necessary as the recipe is just great as is.

Made this last night for a dinner party for new friends. It was very good! My husband really liked the flavors and liked it even more since it didn't require cilantro. We will make this again!

my fiance and two year old son LOVE home made salsa (yes my two year old eats salsa and lives on rachael recipes!. I have to make this recipe times two or three at least once a week. the beans add to the texture of traditional salsa and it REALLY makes it stretch! this is a delicious salsa. i made it the first time for my soon to be sister in law's bridal shower... and i have a feeling i will be making it for a really long time. be aware if you have never tried this... it is ADDICTIVE.

We added mango to the salsa based on recommendations here and it really enhanced the salsa. My wife said she liked it before, but once we added the mango, she couldn't stop eating it. Our vegetarian friend loves it too. Fresh, flavorful, simple and healthy.
