The black bean soup is easy and delicous. Even better the next day!

This was a huge hit! My boyfriend isn't too fond of tomatoes, but the mix of black beans and tomatoes had him going back for seconds and eating leftovers for lunch. We will make this again and again. I substituted water for the stock and it came out good and low salt. We didn't make the monte cristos, but the stoup will be a winter staple.

My husband made this for us, tasted it and said, "Well, we finally found the black bean soup recipe we've been searching for all these years!" Wonderful aromas filled the kitchen almost immediately after he started! He cut way back on the hot sauce, however, using only 5-6 drops. We did not make the Monte Cristo sandwiches. Friends who came for lunch left with a copy of this recipe.

I just want to say, Rachael you Rock Girl ! I just made this Stoup not the Monte Cristo's. The stoup is radically insane in taste. I go for big flavors and let me tell you this dish has big flavors. I had put a dallop of sour cream and some chopped colby jack cheese on top of my bowl. Oh my goodness!!! This rocks. You can definitely entertain with the dish as you suggested and I will in the future. This is definitely cheap and it did take 30 minutes to prepare. Plus me being a college student with tuition to pay on my own this definitely helps. Rachael thanks again for your genius and your blessings. God Bless you and continue to create more yummy recipes. Your #1 fan...I'm out

This recipe was awesome! I made the soup and the sandwiches. The soup was really good, although next time I will use brown beans instead of the black ones. I didn't use jalepeno jello or pepper jack on my sandwiches. Instead, I used picante sauce and moteray jack cheese. My family loved it!!

Tasty and hot, but not that hot. You can go wrong with the Black Bean soup. The Monty Cristo sandwich was a great surprise! Outstanding.

This is probably the best thing I have ever made. It turned out perfect and I will definitely be making it in the future.
