    We ditched the sandwiches right off. Had leftover toasted onion buns instead.

    The soup is great and easy to mix. 10 minutes of chop and drop add in the beans, spices, tomato, and stock and then just let it simmer. I say put in the whole two cups of stock and let it simmer 15 minutes UNCOVERED. The stock cooks down and the flavors combine.

    Ours was slightly sweet. A combination of not quite enough cumin and letting the onion cook a little longer then planned.

    This recipe is posted twice and the other version from "Dr. Meal Good" has slightly updated directions (i.e. 2 tablespoons of ground cumin is 2 palmfuls for those who like to cook the way Rachel cooks.

    Altogether a great tasting and easy soup with a quick clean up.

    I made this for a church soup dinner since our minister is a vegetarian. It was not only a great hit with her, but with alot of other folks as well. It was one of the few soup pots with nothing left at the end of the dinner. The only reason for the 4 stars instead of 5 is because the reicipe as written is flawed for some reason. I made it without broth at all and it was just right. I used canned diced tomatos and it with the other ingredients created the perfect consistency. At the most you would not want to add more than a cup of broth.

    This was good for something different, but I don't think I would make it again. The sandwiches were good, but next time I will leave out the jelly.

    Every time I make this dish everyone immediately wants to know the recipe. No matter who I make this dish for I always get rave reviews. "It makes me look like a seasoned cook" and for that I am eternally grateful.

    My 4 y.o. twins love to watch RR. We saw this show and I had most of the ingredients on hand. Used one can of refried beans and 2 black beans (what I had. No hot peppers (kids, but did use a dash of hot sauce. Added squash. My kiddos and hubby loved it. Had leftovers today at lunch. Didn't make sandwiches.

    Liked these recipes for sure, particularly the MC sandwiches - guest was impressed. I made the soup a bit differently, having overdosed it somewhat w/chipotle sauce (powerful stuff. While still really zippy, it too received rave reviews. These are definitely keepers!

    Let me start off by saying I made the soup only. Hubby doesn't like Monte Cristo's, so I made chicken quesadillas instead - which went great with the soup. For me, yes, it was soup. I thought I had all the ingredients but only had 2 cans of black beans and did not have a bell pepper. I added a drained can of corn and a small can of diced chiles and the soup was really yummy, but definitely not a "stoup." Next time I'll have all of the ingredients on hand first!

    This was easy to make and my entire family enjoyed this recipe. I would recommend leaving the hot sauce out if you are not too fond of spiciness. Each person can always add their own amount of hot sauce to modify their own bowl.
