This soup is excellent! I added a little bit of chipotle sauce to the soup to give it a bit of smokey flavor and it was sooo good. My husband had a cold and I made this for him and this was a good "feel better" meal.

Another winner. Almost everything in the soup I had on hand, including 3 cans of black beans that I would always see in my pantry and be like, "what AM I going to do with you guys?" LOL.....so simple, so affordable, and so hearty and healthy. The sammies were awesome too and did compliment the stoup. I used a really good PF sandwich white bread, and substituted orange marmalade w/champagne in it for the salsa. Great combo of flavors. Rach never disappoints!

This is such a great addition to your recipe rotation. I don't make the sandwiches, just use some whole grain bread to make garlic toast. It is perfect and very satisfying! I add another jalepeno because we like it spicy, but it's still not too hot. I have made this at least 6 times in the past couple years....it never gets old. I also serve cheese, sour, and chopped cilantro for those who want extra. Another winner from Rachael!

I loved the soup, especially because of all the vegetables in the soup. It's a great sneaky way to get picky husbands to eat more!

I think the sandwiches are good, but I would cut the amount of meat in half. I feel like I wasted so much money on sandwiches that my family could only eat 1/2 of!

I made this last night for dinner and it was soooo yummy. My boyfriend can't really handle food that's too spicy, but this is perfect. It has just the right amount of heat.

I ended up using 1/2 a quart of stock and it turned out nice and thick. It is funny, it sort of tastes just like black bean salsa! I served it with quesadillas and tortilla chips for dipping.
Try to get low sodium stock, because it can get a little too salty if u don't.
This is a really really great and super easy recipe

i love this recipe...it's so fast and easy but tastes amazing. i actually use less stock so it's not as liquidy. and i add corn to it. and sometime i eat it with tortilla chips.

This is an interesting twist to soup and sandwich. Add a margarita and you have a part.

Yes, the soup is good (has quite a kick so if you don't like the heat, you may want to cut back on the hot sauce but the sandwich was incredible! I skipped the salsa inside the sandwich and heated up rasberry jam to dip the sandwich in - fantastic!!!!!!!
