This was a great & filling soup. We had some leftovers and had them for lunch the next day and I think the soup was even better as a leftover !!

This was a delicious recipe and very simple to make. I followed the recipe to a T except that I didn't add coriander and I used a green pepper because the store was out of red ones. I, also, smashed the whole can of black beans and I had no problem with it thickening. Since time wasn't an issue, I simmered the soup on low for about 30 minutes. I will be making this again for sure.....and I will be making the Monte Cristos, too. Thanks for a wonderful and simple recipe!

This stoup was awesome. I sprinkled crushed tortilla chips on top as someone suggested and it was delicious!

    Add rice to the soup.

    Add chicken to the soup.

Serve again another night, drained as a side.

The liquid can be frozen and added to ground meat for zeasty taco combinations

I made the sandwich the same way Rachel did BUT, she forgot to tell you that when you take it off the grill or pan and put it on a plate--you had better drag out your knife and fork--after about 20 seconds, you cannot pick it up. Other than that, I found it very enjoyable and tasty, and filling---I;ll make it again and just serve it different.

This recipe is definately a keeper. I made this last night after watching it air on the tv yesterday. It was so easy to make and the ingredients are very simple. I thought this dish was delicious. I didnt change a thing... made it just the way she did on the show (i recorded it on the DVR and followed along and it came out excellent! My hubby who usually adds extra seasoning to everything didnt even attempt to add anything to it... he thought it was fantastic! My three year old daughter even gobbled it up! This soup is great! I would recommend this recipe to anyone. Leftovers will be great tomorrow! :

I really like the flavors in this soup, but it didn't thicken up like I expected. I will simmer again for 20 minutes or so for the leftovers and expect the flavors will blend nicely for the second day. I didn't make the sandwiches, but instead did mini cheese quesadillas for dipping.

This soup was really easy and it tasted delicious. Serving size it for ogre's - It made enough to feed a third-world country! The cilantro was a little much so I'd cut back next time. All-in-all a total 5!

I skipped the Sandwiches and just made the Soup. I also substituted Beef broth for the chicken/vegtable option and served with a little dolup of sour cream. Wonderful!! Took the leftovers to work the next day and several co-workers tried it and asked for the recipe. Super simple to make and really quick. Would recommend to anyone.
