    My entire family really liked this soup...I actually made it the day ahead and we enjoyed it for dinner the next evening! You could really tell the difference from the afternoon it was cooking on the stove until the next day. I added some red pepper flakes, garlic powder, and a bit of sugar as some other reviewers suggested and was completely satisfied with the taste.

    This soup has a lot of flavor. It is wonderful for a cold day or if you have a sore throat. The potatoes add more substance to the soup.

    I am a huge fan of RR recipe's and this soup is really delicious - and I don't fell too guilty eating it. It did take a lot of work though and definitely more than 30 minutes. The recipe yields a huge pot of soup so if you are only cooking for 1 or two - you'll have lots of leftovers.

    I made this recipe from one of her cookbooks. It is a family hit, and we have made several times. Even my 13 year old picky son, who particularly hates onions, loves this soup more than anyone--even with all the leeks. I always have to double the batch-- as my son usually eats 3 bowls at a time. This time I used low sodium bullion cubes to make it quicker and also used turkey bacon to make it less fattening-- I didn't tell my son though-- he said he loved it even more. Thanks for a great recipe. I always use my food chopper and just quickly chop the carrots and celery so it is really fast--I did it Rachel's way the first time and it simply took too long for me.

    This soup was quite good, but seemed to lack something for my family. I added garlic and onion and we liked it much better. Also, it tasted a little sour, probably from the canned diced tomatoes so I added a pinch of Splenda and it helped a lot. I will definately make this again, but will probably not cut the vegs in the ways Rachel recommended as it took too much time.
