    The arugula is a great addition. As per some of the other reviews, I used bacon and about 1/3 lb of it. I let my eggs sit for a while at the beginning while they were cooking, so the bottom got a little "carmelized" to put it nicely.....so make sure you tilt/rotate the eggs while they are on the burner to cook the entire frittata evenly.

    This was very delicious and everyone that I made it for loved it, however the pancetta completely disappears in this recipes. I was very excited to actually find pancetta in my store, because it is usually hard to find, and I was disappointed to not be able to taste it. Next time I may try bacon to see if that is more noticeable.

    Wonderful, easy & tasty! I made this on a whim, since I had all the ingredients and company coming in 30 minutes. I subbed spinach for the arugula, since that is what I had & the flavor was wonderful, and it came out perfect.

    Maybe it was reflective of the (lack of quality of my pancetta, but the bacon flavor was too mild. The taste of this frittata did not say BLT to me, it said LT. I weighed the pancetta to ensure I had the full correct amount for the recipe too. Next time I am going to use American bacon (organic, nitrite-free to bring up the bacony flavor. I love the concept of this recipe, and it was quick and easy to make.

    This Frittata was soooo yummy! I added onions & green peppers because it's easy to hide these veggies in eggs. I used spinach too. My kids gobbled this up! I doubled the recepie & they asked for the leftovers the next day. I will make this over and over again. I can make this dish every Sunday with different veggies and it'll be something new for weeks! Thanks for such an easy and healthy (w/o the cream recepie for my kiddos!

    I've made this frittata as written many times .. . It has also become the inspiration for numerous variations. Add some good, crusty bread and fresh fruit and you've got a meal you can serve 24/7. And it travels well ...

    ....Until you put cheese on top, like I did, which made it even better! Easy to prepare, delicious, makes a lot. Will 1/2 the recipie next time for the 2 of us.
