    Made everything in the recipe for my wife . She Loved it and Me to I don't like Blue cheese but It was great with the meat.
    I did add onions to the Wellington other than that I went word for word . Now she says I have to make it for our friends.
    Thanks it was Great.

    I thought this recipe was delicious. I felt like I was eating something at a really expensive restaurant. . Next times though, I would use a smaller piece of beef. I had to roll out the puff pastry a lot to get it to fit all around. It would have been better if it was thicker. I also used argula in place of the water cress. Great substitution! I did use brie cheese in place of the blue cheese on two of them as well,for those picky eaters. Overal pretty easy to make. Great choice for a special meal.

    Making this meal for my family was the simplest of meals to make and it was just amazing. Cook time was fast, it took me twenty-five mintues to prepare & cook, loved the conveience level. The blue cheese was a perfect match for the meat. I chose to leave out water chess, i"m not a big fan anyways so i did without and the meal was just amazing. My family loved it & i plan on making it again soon. Enjoy!

    I am reviewing only the beef wellington portion of this recipe and it was fantastic.

    I was skeptical that the puff pastry would cook along side the beef so well in such a short time frame, but it's frankly, amazing!

    I couldn't find watercress and substituted tangy baby spinach in it's place.

    The crunch of the puff pastry on top, with the tangy spinach and blue cheese were delicious, but the bottom of the pastry that had soaked up the beef juices was the best.

    Rachael mentioned a few alternatives on her show, chicken with fig sauce and gorgonzola (I think that was the cheese and another I can't remember. I will definitely be trying the others as well.

    I made a few changes, but it was delicious! I couldn't find Cress, so I used Arugula, added chopped/sauteed shallots and mushrooms, and used Applewood smoked Gruyere instead of Blue cheese. I didn't have any parchment paper, but wax paper worked just fine.

    The beef was perfectly cooked. Whoever said each person would have enough eating just 1/2 of the Wellington was correct - the portion was huge.

    I will definitely make this again on a special occasion.

    The many 5-star reviews do not lie! This recipe is quick, easy and so, so delicious! I could have done without the watercress, because it wilted and didn't really add to the flavors, but the combo of the beef, blue cheese and puff pastry was a winner! One tip--my filets were large, so I had to roll out the pastry dough too thinly, just to make it fit. Next time, I'll just use two of the roll-out pie crusts for 4 fillets, instead of stretching 2 crusts too thinly. But, the flavors of this recipe are fantastic! And, so quick and easy!!

    I'm thinking of doing this recipe on Sunday for family and friends. What would you all suggest to use to substitute the blue cheese ? I've got lactose friends and some who just don't like the blue cheese and some that do.

    1. need other kind of cheese to replace the blue cheese
    2. need something else to completely replace the cheese

    I am so tired of people rating a recipe and haven't even made it. What is wrong with you. Read what the other people have said and they made it. What are you a restaurant critic? I've been cooking since I was 13 years old and I wouldn't have the nerve to criticize a recipe unless I have made it and believe me I can cook. This was a wonderful recipe and very easy.

    My husband and I LOVED the beef wellingtons! When at the store I picked up arugula instead of watercress, but the taste was good. Also, I used crumbled Feta cheese - delicious. Easy, wonderful recipe. I will definitely be making this again. I also had a couple of extra chicken breasts...I browned them in olive oil, seasoned with herb d' provence and followed the rest of the wellington recipe. Super tasty...super easy!!
