    I didn't have any tomato sauce or fresh tomatoes, so I just used diced tomatoes and their juice. I was skeptical when making this recipe, but was amazed at how good it turned out! This was so simple and quick to make and my boyfriend liked it too!

    I made this one night when I'd worked a 14 hour shift and still had to make dinner.. it was such a hit, we've played with different ingredients, meats, and cheeses, and it's never come out wrong! Thanks, Rachel, for my favorite 'go to' meal!

    For my diet's sake, I wish I'd never found this use for old bread! It's so good! Actually, the second time I made It I added everything I needed to get rid of, a link of andouille, peppers & onion, I didn't have fresh basil, tomatoes or sauce. So I used a can of diced & tom-basil soup! Was still totally awesome!

    I saw this on 30 Minute meals, and thought it would be a great recipe to use as a guideline. However, I read many of the reviews, and there were quite a few mentions of soggy bread. Additionally, I don't like tomato sauce out of the can, so here's what I did to make the recipe a winner - I like it, and my boyfriend enjoyed it as well. Toast the bread; I did this on the stove top, but I you can do it in the oven as well. Toast it so that it is close to crouton like consistency (as I toasted on the stove, I continually sprayed olive oil on the pieces, in addition to the olive oil and butter the original recipe calls for and season with garlic granules, a bit of salt, pepper and some Italian season (it's all about layers, right?. Remove bread from pan and set aside, then add one more turn of olive oil to pan. I then sauteed garlic, onions, bell peppers and mushrooms - these added a bit of crunch and FLAVOR to what would have been a pretty bland sauce. I also added three chopped plum tomatoes of nice size. Season with italian seasoning, salt, pepper and fresh basil. Simmer for about 15 minutes or until the flavors come together to your liking. Add the bread to the sauce, toss to coat, then spoon into casserole dish, pressing down gently. Cover with mozzarella, and put under the boiler until browned to your liking. The taste and consistency are NOTHING like gnocchi, but is more like a savory bread pudding, which is what I called it. It was firm, but not mushy - and the flavors were excellent. Not a 30 minute meal, but definately a meal that takes less than an hour AND tastes great - which works for me:-
