This turned out to be very simple. I think I may have over cooked the potatoes, but it made it much easier to mash. I added a little cream as I thought it turned out not creamy enough. I think I will make this a weekly staple.

Made this with the honey mustard pork cutlets just as in the episode. The timing went perfectly and I was able to make both dishes with ease.
When I went to buy potatoes, there were no yukon golds (of which I'm typically a fan, so I did this with russets. At first it was a bit on the runny side, but it set up by the time it hit the plate.
The flavor of the cheddar was really mild, even though I used a very sharp aged cheddar. Perhaps next time I won't use as much milk, or will consider cubed cheese rather than shredded so that the cheese will retain its shape somewhat.
I wonder if this will do well with other vegetables. Cauliflower, maybe?

I just tried this and it was great. Thanks for the recipe. I am a very picky eater and therefore can't find many things to try that I can keep the ingredients as is, but this works for me.
